Elizabeth Solaru founded  the multi award winning Elizabeth’s Cake Emporium 10 years ago. The only three times winner of “The Great Cake Bake”, she is renowned for producing the most luxurious wedding cakes and dessert tables. Ranked as one of the best cake makers in the world, clients include European and Middle Eastern Royalty and celebrities.

Elizabeth has appeared on a number of radio and TV shows as a cake expert and has judged many competitions and taught  sugarcraft techniques all over the world. She  recently written her first book,  the award winning OPULENCIA, a book about artisan baking and sugarcraft.

Elizabeth Solaru will be teaching a two tier version of her iconic Marie Antoinette wedding cake at the Swiss Cake Festival.

Students will learn the following key techniques:

  • Achieving a consistent ombre effect using the Massa Ticino™ Sugarpaste Colour Mixing Guide
  • Using moulds to create baroque detailing from sugarpaste
  • Gilding and arranging sugar paste baroque pieces
  • Making large sugar roses using cutters and flowerpaste
  • The principles of making small wired filler flowers and taping these together to form bunches
  • Arranging sugar flowers on a cake to give a rich and opulent effect
